I believe you went to the "Fiesta de Toros" which translated means the "Festival of Bulls", this festival is held in November every year. Part of the festivities includes releasing bulls and participants try to catch them or ride them, but this isn't done in town (square) per se, rather near it. Festival lasts a few days, so I am not sure if you went to the beginning, middle or end of it.
